My first impression was similar: good but not great. Simple and lacking complexity. But time has helped change this bottle. I’ve had my press sample since September and despite consuming precious little of it, that air space has helped it out immensely with spice, fruit and and finish–which is pretty amazing for a mash bill without rye or wheat. Richness likely won’t increase much, but it’s still a fun experiment, a neat taste of the past.
